What I'm eating right now:
S'mores Lava Cakes
1 stick unsalted butter, plus some for greasing
1/4 cup sugar
4 oz bittersweet or dark chocolate
2 large egs, plus 2 egg yolks at room temp
1 tablespoon flour
3 tablespoons heavy cream
2/3 cup marshmallow cream
2 squares graham crackers crunched
preheat oven to 425. Grease 4 6 oz custard cups, coat with sugar. Chop chocolate and place in a medium bowl with butter... melt it in the microwave stirring intermittantly until smooth. Whisk together eggs, yolks, and sugar until foamy. Whisk in chocolate, then flour, then pour into cups. bake for 13 mins. In a med bowl microwave the cream on high for 30 secs and then whisk in the marshmallow cream til smooth. Invert the cakes on plates and drizzle with marshmallow... sprinkle graham crackers over the top...
break into your cakes and enjoy the gooey-ness that oozes out. It really is happiness on a plate... and then in your mouth. Oh! Eat it with milk!
